Blanca Rojas, Huila, Colombia

Blanca Rojas fick för ett år sedan bidrag till att starta upp ett koppningslabb. I staden Huila finns flera liknande privata och kooperativa köpare, men ingen av dem koppar och håller lotterna separerade på samma sätt som Blanca Rojas.

Kaffeproduktionen i Colombia är uppbyggd så att flera små gårdar som jobbar mot ett kooperativ eller organisationer, i detta fall är det den Blanca Rojas som sammankopplar bönderna. Bönderna processar själva sitt kaffe och säljer det sedan, med pergamentet kvar, till Blanca. När en odlare levererar sitt kaffe så provsmakas kaffet direkt och bönderna får betalt. Vår råkaffespårare har genom Blanca inlett en dialog med bönderna och Blanca där de söker efter kaffe producerat i särskilda områden och en viss typ av underart etc. Bönder får riktlinjer i skörd och processning och får tillgång till premie till som innebär att de får extra betalt utöver marknadspriset, baserat vilken kvalitet kaffet har. Blanca håller i sin tur alla lotter noggrant separerade och kvalitetskontrollerar dessa noggrant. Premien bidrar till att driva upp kvalitén på kaffet och samtidigt verka för att bönderna får bättre betalt.

Produktion: Kaffebären plockas, processas och torkas på gården innan de levereras som parchemntkaffe till kooperativet eller organisationen.

Process: Bären plockas för hand på gården. Efter fermentation i 12-16 timmar tvättas kaffet och defekta bär plockas bort. Kaffet sköljs i rent vatten innan det skickas till torkning. Kaffe i Huila torkas på små patios, och sorteras för hand av odlarna. Odlarna levererar frekvent kaffe i små omgångar så snart deras dagliga eller veckovisa batch är redo. Den här microlotten kommer från en enda odlare.

Smakbeskrivning: Krämig med medium kropp och livlig syra. Mogen karaktär med smak av björnbär, torkade bär och fikon.

 

 

Coffee production in Colombia is based on smallholders related to a cooperative or association. The growers often process the coffee themselves, and then sells the parchment coffee to a cooperative. When a grower delivers his coffee it will be cupped immediately, and if it’s not up to standard they just resell it locally, to access the cash to buy and store good coffees only. 


Through our green coffee sourcer we offers a premium to the grower which means they get paid extra in addition to the market price, depending on how good the coffee taste on the cupping table. Farms that can get the premium have to be located above a certain altitude, have at least 2 acres of land and cultivate species such as Caturra and Bourbon. How the growers dry the coffee, and ventilation also plays a role. The premium contributes to drive up the quality of the coffee and at the same time helps the farmers to get better prices.

This is a young organization and they got some funds to establish the cupping lab a year ago. They are in the town of Buesaco where there are plenty of similar private and Cooperative buyers, still no one is cupping and keeping the lots separated in the same way as these guys.

Production: Coffee cherries are picked, processed and dried on the farm before they are delivered as dry parchment to the association.

Process: The cherries are handpicked by the farmers. After fermentation for 12-16 hours, the coffee is washed and floaters and damaged cherries are seperated. The coffees are rinsed in clean water before being sent to drying.

Espresso recipe: Dose: 18 g, Beverage weight: 37 g, Extraction time: 30 seconds,

TDS: 9,5, Extraction: 18.5% - 19%

Cupping notes: Creamy with medium body and sparkling acidity. Mature character, notes of blackberry, dried berries and figs.
