     A sweet and creamy coffee with fizzy notes of papayapassionfruit, and brown sugar with an aftertaste of fudge. The mouthfeel is creamy with a medium to big body, typical to the Pacamara varietal

    Processing: Natural processCommon for Nicaragua, the coffee is washed and separated by density directly at the farm before it is taken by truck to the process station. At Mierisch process station, the coffee has been dried under temperature control in their low-temperature room. This is new and experimental processing, and its accuracy truly shows in the cup.

    Roast style: Light to medium to enhance the natural flavours of the coffee and not add any ashy flavours. 

    This is a coffee that is experimental coffee, maybe the most fun and complex coffees we have this year. Not only is it a Yellow Pacamara varietal, which is quite rare to find and when we do, it always stands out on the tastings with its tropical fruit notes and complexity combined with a creamy big body. On top of that, this Yellow Pacamara is processed as a natural, in a controlled low temperature. I think you can tell that this is a nano-lot, of only 273 kilos. And we sincerely recommend you to try this one. 

    It is produced at one of the farms we are working closely with, Las Delicias in Nicaragua. We also have the Java processed as natural and washed from here.

    The owner and manager of Las Delicias are Eleane Mierisch. Eleane is coming from a well-established coffee family that have several farms in Honduras and Nicaragua that has won several Cup pf Excellence throughout the year. But, Las Delicias is the first one that is Eleane's own farm and this very coffee is just the fourth harvest coming out of there, and Drop Coffee is proud to showcase it to you for the third year. But it is the very first time it has a harvest of the Yellow Pacamara, and here it is! 

    About Eleane Mierisch and Las Delicias
    Eleane is one of the leading lights in coffee processing in Nicaragua and Honduras. Much of the reason the coffee from the family Mierisch is tasting so clear and sweet, is thanks to their great processing, and Eleane is the one in charge of that. A job title normally dominated by men in Nicaragua.

    Eleane comes from a coffee-producing family, but she had studied to be a nurse. She works in the family business for decades but has never owned her own farm – until a few years ago when she acquired Las Delicias all for herself.

    Las Delicias is located in the region of Jinotega at an average altitude of 1450 metres above sea level, which is considered very high for Nicaragua. It is located next to another Mierisch farm, so Eleane knows the area very well, she knows the land and what it's capable of producing. On top of this, there is Eleanes' passion for coffee, and then you can start to understand why she wanted to produce coffee on a farm of her own. 

    The farm is 20 manzanas (about 13 hectares) in size and all of it is planted with coffee. Eleane is working with a lot of respect for nature and she always says "to be grateful to mother nature".

    About the Yellow Pacamara varietal
    The Yellow Pacamara is a natural mutation of the Red Pacamara (a cross between a Maragogype and Pacas). The Mierisch first discovered this yellow maturing varietal on the farm Limoncillo around 2004.  re-planted some seeds from these initial trees and from there have grown this varietal in their other farms as well.

    The Yellow Pacamara varietal requires more food (fertilizer) than other varieties, about 20% more when compared to a Bourbon or Caturra, and requires soil that is rich in magnesium, zinc, and potassium (which La Huella is generously endowed with). It is also a varietal that is susceptible to diseases and does not produce a large yield. Despite these disadvantages, this varietal produces a spectacular cup profile. Fruitier and more citric and tropical fruits, than its red maturing cousin.

    Sustainability 
    The Mierisch family are very active in social projects around the farms. Not only do they have a full-time kitchen team at their farms to make breakfast and lunch, with 1000 tortillas going out every day. They have also built daycare centres and schools for the workers' children, located at the farms. Children helping their families at the farms is common in Nicaragua, but instead, they are asked to go to the school or leaving the kids at the caretaker as they are working. The workers are also offered help with family planning, and medical advice from specialised staff.
