For the third year in a row we’re working with Nepaly Bautista’s farm he has chosen to call Jazmin. Last year our roaster Benjamin Norman won the Swedish Brewers Cup with this coffee and it’s an yearly favourite for many - it’s mature fruity flavours and high sweetness in such a clean and crisp cup. Personally, I’m very fond of the certain kind of acidity unique for the Santa Barbara region, reminding of black current. /Joanna Alm, Head roaster
In the valley El Cedral, Neptaly Bautista owns two small plantations on the mountain range in Santa Barbara where he shares a wet mill with his brother-in-law and neighbour. The plantation is situated close to the jungle, thus making it a challenging area to process coffee in. However, when managing to grow coffee in this soil, the result is exceptional which is probably why this part of the hillside has become the largest supplier of Cup of Excellence winners in Honduras over the past several years. As our green coffee sourcer for Jazmin, the Collaborative Coffee Source, said: ” To produce a coffee that tastes fruity is not complicated, but to produce a coffee that’s clean, clear, fresh and fruity like this - that’s an art”. The last couple of years Neptaly invested in his facilities, especially new drying beds and the coffee is more even than earlier. Year by year, the quality has improved and has this year resulted in even more tropical fruits and clear cup.
