Blanca Rojas, Colombia

I remember the coffee from Blanca Rojas as our most elegant coffee from Colombia last year.  Cupping the coffee this year with our green coffee source for Colombia, it was tasting like sparking raspberry soda with some milk chocolate notes. We hope we can bring out some of that liveliness to the cup.  /Joanna Alm, Head roaster  

Coffee production in Colombia is based on smallholders related to a cooperative or association. The growers often process the coffee themselves and then sells the parchment coffee to a cooperative. When a grower delivers his coffee it will be cupped immediately, and if it’s not up to standard they just resell it locally, to access the cash and store good coffees only. Through our green coffee importer we are yet again holding this fine coffee from the female producer Blanca Rojas. We have bought the coffee depending on how good the coffee taste on the cupping table. Through a project by Nordic Approach the farms can get a premium based on the quality. The coffee has to be located above a certain altitude, has at least two hectares of land. How the growers dry the coffee, and ventilation also assessed. The premium contributes to drive up the quality of the coffee and at the same time give the farmers a better prices and is a great motivator for quality.

Processing: Fermentation for 20 to 25 hours before the coffee is washed and floaters and damaged cherries are separated. The coffees are rinsed in clean water before being sent to the drying.
Flavour description: Juicy cup with medium body and sparkling acidity. Mature character, notes of raspberry and milk chocolate.
